Raw cream
Neither pasteurised nor sterilised, thisĀ is the cream that we associate with ourĀ grandmothers. It is loved for its thickĀ consistency and texturising effect. It is theĀ pure product of the skimming process andĀ for the first few days has a liquid texture.Ā Stored at +6°c, it retains a sweet flavourĀ and has a higher butterfat content thanĀ other creams. It is imperative that its labelĀ mentions the term ārawā.
